That scene was added after the test screenings. The audience was still too worked up and noisy following the cellar scene, as a result weren't paying full attentuion to the end of the film, and so another scene had to be added. So we got the Scooby Doo style villain's motivation scene, giving the audience time to calm down before the final scene. Oh, incidentally, the aspic line wasn't actually in this version- because nobody would get the reference, the screenwriter changed it to jello.
